This weekend we explored a downtown area of a nearby city for my husband’s birthday. He loves old buildings, and the kids and I love playing with our cameras!
Last week I was super excited about trying new recipes. I cooked extra meals all week, trying to restock our freezer with emergency meals. I shopped and planned and tried new things.
Until yesterday.
After fighting a headache all day, I’m still tired. I’m happy to have those extra things in the freezer, because with a busy week in front of us, I might need some of them.
So here’s our (very simple) meal plan for the week. I’m not out of enthusiasm – just taking a strategic break on those nights this week when I know cooking won’t be easy.
Breakfast:
- Breakfast parfaits with fruit and Cinnamon Almond Granola
- Cinnamon Bread and fruit
- Healthy Breakfast Cookies
Dinner:
- Monte Cristo Waffle Sandwiches
- Spaghetti with Easy Bolognese Sauce and steamed broccoli
- Bratwurst with roasted veggies and applesauce
- Chicken with Lemon Cream Sauce over rice with roasted carrots
- Slow-cooker Tomato Soup with sandwiches
- Leftovers
- Valentine’s Day: Family Grilled Cheese Sandwich Competition
