It’s been a long time since I’ve linked up at Menu Plan Monday, but I’ve really been missing it. Having a menu plan that’s written down helps keep me on track for the week and eliminates last-minute grocery store runs. I appreciate the peace of living without having a five o’clock panic attack about making dinner each evening, too.
So here’s our plan for the week. With major events happening nearly every evening, dinner will sometimes happen at lunch and often be something quick, but … so it goes.
Breakfast:
– Pumpkin-oat muffins, bananas
– Scrambled eggs, fruit
– Cinnamon Almond Granola over yogurt and fruit
– Peanut Butter Chocolate Chip Baked Oatmeal
Dinner:
– Slow Cooker BBQ Chicken in sandwiches with salads and applesauce
– Dinner out
– Beef & Bean Burritos, chips and salsa, apples
– Nachos with beef and beans, salad
– Creamy Veggie Casserole, applesauce
– Roasted chicken casserole, applesauce
– Leftovers
I’m hoping to have time to bake these Chocolate Whoopie Pies before church on Wednesday. I’m not sure I’ll be able to make it, but I sure am hungry for a good whoopie pie!
