It’s Mother’s Day week – whoo-hoo!  I love getting to spend some extra quality time with my family, and they always make sure that happens.  How do you plan to spend the weekend?

I just *might* be looking forward to next weekend so much because the days in between promise to be extra crazy.  We have some good things and some new things and some big things happening this week, and while none of it is bad, it’s guaranteed to keep me hopping.   I’m trying to make a meal plan that’s flexible and able to keep up with our busy schedules.

Menu Plan Monday – April 17, 2016

We’re having another one of those busy weeks, but it’s steady.  With one thing planned for every day and a birthday thrown into the works, we’ve got lots of good stuff happening.

What do you have going on this week?

Breakfast:

Pancakes

Dinner:

  • Grilled Bratwurst sandwiches, salad
  • Oriental chicken, fried rice, stir-fried veggies
  • Tacos, salad, pineapple
  • Sliced ham with s’mashed potatoes, baked corn, and steamed broccoli
  • Birthday pizza, salad, cake and ice cream

Since the birthday cake won’t be happening until the very end of the week, I’m hoping to make some of these Soft & Chewy Oat-Chip Cookies.

Last week was absolutely crazy – but I’m determined to slow this Holy Week down a bit.  We have a few really crazy, busy days, but those are bookended by slower days, and we’re going to take full advantage of our down time. 

While it’s chilly here today, we didn’t get the forecasted snow yesterday, and spring seems to be on the way.  That means that it’s almost time to begin work in the garden, too.  Yay!

My Big Helper will turn eleven on Friday – where does the time go? – and so there’s going to be lots of celebrating happening this week.

The weather is forecasted to be gorgeous this week, too, so I’m trying to maximize our time outside.

Menu Plan Monday – March 5, 2016

We’re back in business with a crazy week coming up.  We’ve got an overnight book club event, an evening church gathering, and an out-of-town field trip, so meals are going to be simple.

On the bright side, though, I’m ready for that.  I picked up our Zaycon order last week, and in less than three hours, I had 32 packages of chicken cleaned, bagged, labeled, and in the freezer.  Our book club chicken, for example, is already cut and marinating!  I love being able to prep in advance.

We’re back in business week with lots going on, so our meal plan is going to reflect that.  I’m also going to be picking up my first Zaycon chicken order and prepping all 40 pounds for the freezer, so  …. expect to see some chicken on the menu over the next few months.

My husband surprised me with a fancy dinner out for Valentine’s Day – just the two of us – and the dessert we had was amazing.  I found this recipe for Hazelnut Chocolate Cheesecake, and I think we’re going to give it a try.

Menu Plan Monday @ A Nest in the Rocks

This weekend we explored a downtown area of a nearby city for my husband’s birthday.  He loves old buildings, and the kids and I love playing with our cameras!

Last week I was super excited about trying new recipes.  I cooked extra meals all week, trying to restock our freezer with emergency meals.  I shopped and planned and tried new things.

Until yesterday.

After fighting a headache all day, I’m still tired.  I’m happy to have those extra things in the freezer, because with a busy week in front of us, I might need some of them.

So here’s our (very simple) meal plan for the week.  I’m not out of enthusiasm – just taking a strategic break on those nights this week when I know cooking won’t be easy.

Menu Plan Monday – January 25, 2016

It’s been a  long time since I was excited about menu planning.  I think I was stuck in a rut.  I kept making the same meals over and over again, feeling pressured by time and the crush of other activities, and cooking no longer felt fun.

I’ve been fasting for the past few weeks, though, and after some time with a severely limited menu, I’m excited about all of the flavor options out there.  I’ve been hunting down new, healthy recipes, and I can’t wait to find more.

Menu Plan Monday – June 1, 2015

June has arrived, and while the calendar says summer hasn’t arrived yet, it sure feels like summer!  We’re taki-grng a much-needed break from school this week, as well as finishing up the baseball season and working in our garden.  It’s great to be outside!

Simple, healthy meals are still the main plan.  Baseball will crunch dinner time several nights and the heat has arrived, but it will be nice to be less rushed during the preparation.

We’re going to try to make this Springtime Strawberry Pie this week, too.  Yum.
